The Emissary doesn't make prosecco by the numbers. It makes artisan, single vineyard, slow fermented prosecco.

When you slow (and cool) ferment, you allow the wine to develop WAY more layers. The fresh, zesty characteristics aren't knocked out of the wine by high temps.

It takes more time, and it's more expensive. But my goodness is it worth it.
