Serve this slightly chilled, and my goodness does it fit the bill for the weather we've been having.
Based in the village of Pommard, Launay-Horiot is a family-run wine producer that has been in operation since the 18th century. The domaine covers approximately four hectares of vineyards and is currently overseen by pilot-turned-winemaker Xavier Horiot.
This expression comes from the 2.2-hectare Les Perrières, a premier cru vineyard that was planted in 1902. The Pinot Noir grapes from these ancient vines produce an outstanding Pommard, with a unique depth and length.
Grapes are hand harvested, destemmed, and held in cold maceration for 6-8 days. Fermented with a mix of pumping over and hand plunging (pigeage). The wine was aged in oak for 12 months.
