Love it when Chablis sees the inside of the oak barrell. You get a great blend between buttery tones and mouth-watering lemony-ness.

Not only that, but this is aged on lees with regular battonage - which is to say, it's got some beautiful patisserie / brioche undertones.

The Defaix family is one of those where they've been growing wines way into the great-great-great-great grandfathers of their family tree.

One of their secrets is never getting to greedy. Using the same 1er cru sites, limiting yields, and treating everything to organic and bio dynamic principles.

I've rarely seen such a single-minded, and almost selfless, approach to making wine.
