This wine comes along once in a blue moon.

An estate wine, made exclusively from grapes from the old vines grown within the walled enclosure of the castle.

Only made in exceptional cases when the harvest reaches its maximum expression of the 'terroir', and perfect balance is achieved. So far this has only happened in 2001, 2004, 2005, 2008, and 2017.

After rigorous selection of the bunches and alcohol fermentation, the wine is transferred to the castle's cellar where it rests for about 24 months. It ages in French, extra fine grain oak to maximize flavour and minimize oxidization.
